Château du cros Tradition

Sweet white wines
Wine made from a centenary plot of Semillon planted in 1907 on the top of the hill behind the medieval castle.
The yield is very low and only the great vintages are bottled.
Grapes : 100% Sémillon
Soil : clay and limestone on the subsoil.
Harvest : Manual harvest handpicked, 5 selective pickings are carried out, selection of grapes with noble rots call Botrytis Cinerea.
Ageing : 16 months in French oak barrel.
Tasting notes : Nice Citrus and White flowers aromas on the nose. Strong flavors of candied apricot and pineapple fruits with a little toasted touch. The mouth takes end on a faint taste of honey and caramelized.
Food and wine : great as an apéritif, it traditionally goes with foie gras and blue cheeses. It goes also well on a roasted chicken, smoked salmon and ginger or spicy tapas.
When to drink : This wine can age 20 to 40 years after the vintage.
Serve chilled at 12 ° C and not too cold to release the aromas.
